This Week’s Farm Fresh Recipe
CHICKEN LIVER PATE
44 oz chicken liver
3 oz duck fat
6 ea shallots minced
6 ea Garlic cloves minced
1/5 bunch thyme
1.5 tsp pink salt
1/2 tsp black pepper
1.5 cup Madeira
2 tsp Agar Agar
2.5 cups heavy cream
2 tsp Salt kosher
2 tsp banyuls vinegar
DIRECTIONS:
Soak chicken liver on milk for 1 hour. Drain and reserved.
Sweat shallots and garlic with duck fat. Add Chicken liver, thyme, pink salt, black pepper, kosher salt and cook until livers are half way cooked .
Add Madeira and reduce by half.
Add heavy cream and agar agar. Simmer for 3 minutes and blend.
Pass through a chinois and reserve in fridge overnight.
Slice and serve to order!
