This Week’s Farm Fresh Recipe

Summer Vegetable Empanadas 

Ingredients: 

  • 200 Gr   Corn Flour 

  • 100 gr  cold water 

  • 1 tsp baking powder 

  • 25 gr  All purpose flour 

 

  • 1 ea Yellow corn 

  • 2 ea Zuchinni 

  • 4 ea Chilaca peppers 

  • 200 gr  Appenzeller Cheese 

  • 2 ea Big Heirloom tomato 

  • 1 ea garlic clove 

  • Β½ bunch cilantro 

  • 2 ea Lime  

  • 1 ea small onion 

 

  • Yellow corn 

  • Summer squash 

  • Chilaca Peppers (or some other kind of peppers from Foods Market available., I saw some last time I was there. 

  • Appenzeller cheese  ( from dedricks cheese) 

  • Heirloom tomato salsa fresca    

 

Directions: 

  • Roast Chilaca Peppers , seeded and peeled.    Mix  cheese with yellow corn, julienne peppers and small diced summer squash. Season with salt to taste. Reserve the mixture to fill up empanadas. 

  • Mix Corn Flour with water, salt and flour and baking powder until dough is homogeneous.   

  • Press dough with a tortilla presser and fill it with summer vegetables mixture. 

  • Fry at 350F until is  golden brown.
